Message from Hayato "Ramen Prince" Ishiyama

Opened in 2012, Mentokoro Hare is located at the intersection of Showa-dori and Kototoi-dori streets. The owner/chef gained experiences at a renowned ramen restaurant related to Higashi-Ikebukuro Taishoken. The thick, collagen-rich soup stock made from chicken feet and pork legs requires hours to be completed, and then, dried horse mackerel is added to give deeper, punchy flavor. The combination of the soup and extra-thick noodle is just awesome. Another thing worthy of special mention is the roast pork topping. By cooking under low heat, the goodness of selected pork is confined to itself. In addition to Tsukemen, orthodox "Chuka-soba" (ramen) is also authentic and delicious.
