The owner/chef had gained experiences at a renowned miso-ramen restaurant, and then he opened his first restaurant "Mendokoro Hanada" in Ikebukuro in 2010. Currently he owns four restaurants in total, located in Ikebukuro, Ueno, Shibuya, and Kanda respectively. Each restaurant has been so popular that there always is a long line of customers. Hanada's ramen is Sapporo style that features Paitan soup, miso-based soup, and wok-fried vegetables such as cabbage, garlic chive, and bean sprouts. Hanada uses Shiro-miso (white miso) that has mild flavor with salty sweetness, and then add garlic and ginger to enhance the flavor. Combination of thick, chewy noodles and the rich thick soup is just perfect. If you would like, you can change the size of wok-fried vegetables to larger portion with no extra charge.
