Message from Hayato "Ramen Prince" Ishiyama
The well-built owner/chef Mr. Morishita was once a Sumo wrestler. When he visited Australia after his retirement as a sumo wrestler, he had a fateful encounter with a ramen place. He was very impressed by the ramen and then started working there. As a result, he opened his own ramen restaurant in the town of Ueno. The thick, rich Tonkotsu (pork bone) soup is authentic Kyushu style. One of Sanji's popular ramens is "Supe" that probably stands for special. It is a hot-and-spicy ramen made with garlic, red chili pepper, and the original sauce all of which enhance the flavor of the rich Tonkotsu soup; however, do not worry, it is not too hot since the rich flavor of the soup offsets the excessive hotness of chili peppers. The noodle Sanji uses is a product of Asakusa Kaikarou.
